A few years back I was not even bothered about my weight. Till one day I discovered that my excess weight of 35 pounds was having its effect on my cholesterol. I was over 250 in total cholesterol, 190 pounds, which is nearly 35 pounds in excess for my Body Mass Index, barely able to walk 1 kilometer without huffing and puffing. I had tried to "lose weight" or "get trim" a few times before, but most of the time gave up the chase attributing it to lack of time due to my busy schedule.

Creamy Chicken Enchiladas


I got this recipe from a fellow Weight Watcher, Kristin (www.shoutinfromtherooftop.com). This recipe is SOOO GOOD! My family requests this all the time. You could lighten this up even more if you used Fat Free tortillas and fat free sour cream!

Ingredients:
10 1/2 oz 98% Fat-Free Cream Of Chicken Soup, (1 can)
1 cup Salsa
2 tsp chili powder
2 cup cooked chicken breast
1 cup light sour cream
10 Mission flour tortillas
8 oz Kraft 2% Milk Natural Cheese Mexican four cheese shredded

Directions:
Mix soup, sour cream, salsa, and chili powder. Mix 1 cup of salsa mixture with chicken and cheese. Spread about 1/4 cup of chicken mixture down the center of each tortilla and roll. Place in 9×13 baking dish. Pour remaining salsa mixture on top of enchiladas. Cover with foil. Bake at 350 degrees for 40 or until hot and bubbly. Top with chopped tomatoes & green onions if desired..

Zumba!


Have I ever mentioned on here that I am afraid of do not like group fitness classes? They intimidate me. I always feel like the biggest, most uncoordinated person in the room.

But last night, I tried Zumba... and I loved it! I always wondered what the big deal was, and now I see. There was no pressure to be perfect, and I love to dance. In 52 minutes, I burned 772 calories... so I will definitely be back!

So strength training yesterday... after Zumba I was wiped out. I have a busy day today, so I am actually going to the gym NOW so it will be DONE.  Can you tell I'm still motivated?

Still no sugar, but yesterday there WAS temptation. A couple of weeks ago, I left a bag of my groceries at WalMart. Apparently, the write the items in a book, so that when you come back you get a refund. Well, I came back yesterday and forgot my receipt - which is fine, but you have to get the items instead of the refund. One of the items? Double-stuffed Oreos.

Seriously... I almost left them on the counter. But my kids haven't had a "treat" in a while so I brought them home. I told my oldest to hide them where I couldn't find them. But truthfully... I really don't even want them now. The fruit is really helping with the cravings and withdrawal symptoms.

It's the weekend, so I feel like I need to have a plan (especially since we'll be spending the night away). I am babysitting Jess's (four) boys this weekend, and I have decided to do it at her house instead of mine. She has more room, a swing set, and a pool. I can handle all seven kids at my house, but there is just more to do over there. So here is my plan:

1. Bring plenty of fruit & veggies.
2. Have yogurt and other healthy snacks for the kids.
3. Bring my own bottled water.
4. Offer to make dinner (so I know it will be healthy).

Starving


Is it possible for MY body to go into starvation mode? I didn't think so, but now I'm wondering.

I stayed 100% on plan this week. Journaled everything. The only day I went over 1200 calories was on Saturday, and that was for a planned dinner out with a friend. I only ate 1/2 of my entree, and drank water. I turned down pizza AND birthday cake earlier in the day to account for dinner. I was so proud of myself for having a successful week.

Until I weighed in today at work.

Guess how much I lost?

Nothing. Nada. Zero. "0".

I almost cried. I mean, it's Valentine's Day, and I'm single. I have four kids and I'm broke. My son has the flu. I'm depressed. And the one thing I was looking forward to (weight loss for the week) didn't happen.

UGH!

I was sure that 1000 - 1200 calories daily would get me the loss I wanted. I wasn't hungry at all and didn't feel deprived. I thought I'd made good choices! My water intake was great. I went to the gym twice and stayed active all week. What gives?

Is that amount of calories NOT ENOUGH? Is my body in shock? I don't know.

According to Sparkpeople, I need 1270 - 1620 calories per day for my height, weight, and age. Livestrong.com says I need 1690 to lose 3 lbs per week. That amount is above my usual weight loss comfort zone. What is right? What is wrong? I DON'T KNOW!

So, I guess this week I am going to try to stay between 1600 - 1700 calories and see what happens. I am going to try my best to get at least 3 days in the gym... I went today and walked for 30 minutes and did arm exercises. My coworker/workout buddy is extra encouraging (and btw she lost 8 lbs this week... :/).

I refuse to give up. Today's news was discouraging, but it won't get me down for too long...
